Steps

1.      Preheat the smoker

Preheat smoker to 250°F according to the manufacturer’s instructions.

·  ·  Prep the potatoes for smoking

Evenly coat the potatoes with the olive oil so there are no dry spots. Sprinkle the Kosher salt over the potatoes and toss them until the salt covers the entire surface of the potatoes.

·  Smoke the potatoes

Place the potatoes on the smoker and smoke at 250°F until they reach an internal temperature between 205°F and 212°F, approximately 2 hours depending on the size of the potatoes.

I recommend using an internal meat thermometer to easily keep track of the temperature. Remember, always cook to temperature and not time! You can also insert a toothpick into the potato to test doneness.

Serve the smoked baked potatoes immediately after removing them from the grill. Top them with butter, sour cream, cheese, and green onions, or any combination you prefer. Enjoy!
